Meet the BLTizza
Bacon, lettuce, tomato, and izza.
She’s awfully purdy.
On Sunday when I asked Daniel what I should make for lunch, he kissed me sweetly, told me to choose, but reminded me that he “doesn’t love BLTs" like I do. I smiled and told him, “oh, thank you for reminding me!”
And made a BLT pizza instead.
I hear compromise is the foundation of a loving relationship. I absolutely intend to try that someday.
Applewood smoked bacon and crumbled feta cheese with greens, tomato, and red onion, all tossed in a sweet and salty maple-bacon vinaigrette. The play of flavors is just so lovable. Tangy tags salty and sweet catches smoky. Feel free to use pizza dough here, but I highly recommend using fresh flatbreads from the deli or bakery section of your local market. Just char them slightly under your broiler and pile them high with bacon salad.
4 cups mixed baby greens
1 small tomato, diced
1/2 small red onion, thinly sliced
4 slices bacon, pan fried, drippings reserved for dressing
1/2 cup crumbled feta cheese
1/4 cup maple bacon vinaigrette (recipe below)
2, 8” flatbreads
Gently toss the greens, tomato, onion, crumbled bacon, and feta cheese with the vinaigrette in a large bowl. Set aside. Broil the flatbreads for about 2 minutes per side, just until charred and crispy. Divide the salad mixture among the two warm flatbreads, slice with a long chef’s knife, and serve immediately.
Maple Bacon Vinaigrette
3 tablespoons extra-virgin olive oil
¼ cup apple cider vinegar
2 tablespoons bacon drippings
1 ½ tablespoons maple syrup
1 tablespoon spicy brown mustard
1/2 teaspoon salt
1 teaspoon freshly ground pepper
Whisk all dressing ingredients in a medium bowl until well combined. Store in an airtight container at room temperature for 2 days. You will only use 1/4 cup of dressing for the BLTizza.
