On Sunday when I asked Daniel what I should make for lunch, he kissed me sweetly, told me to choose, but reminded me that he “doesn’t love BLTs" like I do. I smiled and told him, “oh, thank you for reminding me!”

And made a BLT pizza instead.

I hear compromise is the foundation of a loving relationship. I absolutely intend to try that someday.

Until then…

Applewood smoked bacon and crumbled feta cheese with greens, tomato, and red onion, all tossed in a sweet and salty maple-bacon vinaigrette. The play of flavors is just so lovable. Tangy tags salty and sweet catches smoky. Feel free to use pizza dough here, but I highly recommend using fresh flatbreads from the deli or bakery section of your local market. Just char them slightly under your broiler and pile them high with bacon salad.

 

BLTizza

makes 2

4 cups mixed baby greens

1 small tomato, diced

1/2 small red onion, thinly sliced

4 slices bacon, pan fried, drippings reserved for dressing

1/2 cup crumbled feta cheese

1/4 cup maple bacon vinaigrette (recipe below)

2, 8” flatbreads

Gently toss the greens, tomato, onion, crumbled bacon, and feta cheese with the vinaigrette in a large bowl. Set aside. Broil the flatbreads for about 2 minutes per side, just until charred and crispy. Divide the salad mixture among the two warm flatbreads, slice with a long chef’s knife, and serve immediately.

Maple Bacon Vinaigrette

3 tablespoons extra-virgin olive oil

¼ cup apple cider vinegar

2 tablespoons bacon drippings

1 ½ tablespoons maple syrup

1 tablespoon spicy brown mustard

1/2 teaspoon salt

1 teaspoon freshly ground pepper

Whisk all dressing ingredients in a medium bowl until well combined. Store in an airtight container at room temperature for 2 days. You will only use 1/4 cup of dressing for the BLTizza.

    ahhhhhh this looks delicious. though maybe i’d skip the onions.
    you had me at maple bacon. i’ve been diligently filtering and saving my bacon drippings to use for something really tasty. i think this might be it.

    on another note, a quick look at my google reader and i’m fairly certain you win for the most starred entries.

    This dish is perfect!! I love that you used flat bread, the extra crunch had to be divine! Maybe add a little avocado for the ride? I’m not sure if that would play well with the feta. Have a great weekend- Paulie

    Ok this is a recipe I am making tomorrow.. I just showed my daughter and she gave it a big thumbs UP… I have to tell you since reading your blog,, I find myself excited each morning looking for another recipe. And I have tried many, many of them. Plus I have to share that each morning I am now looking forward to oatmeal, peanut butter, with a big old banana on top…. Way to go. I have the fluff in the house too.. I eat that by the spoonfuls, which is not to healthy, but does wonders for my sweet tooth… thanks again Andrea…. I really do love your site. :)

    I just started following so this comment is in response to something you said like 10 posts ago about hating cold sheets – The Vermont Company Store has this fantastic bed warmer that you put under your sheets and warms your bed up. Plus it has dual controls so your side can be a different temp from the other side.

    Worth a million but probably much cheaper!

    Ahhhh this looks so so good. and also really easy to make!!
    Acccttuallly, I was wondering. I’m heading off to university next year and I will be in a shared flat, so I will have access to a kitchen. I REALLY do not want to be spending money on food and eating out often… I know that if my meals start to get boring I will end up just buying already made food. Could you possibly do a post on meal planning while at college? I find that a lot of recipes are for at least two or four servings… and since I will have a shared kitchen I dont know how much room I will have for freezing extras. But I really want to have healthy, satisfying yummy meals.
    anyway I’m not going until september… so if you do decide to do some sort of post dont worry about doing it anytime soon!!

    When I was working at FamilyFun they were developing a BLT Pizza recipe. During recipe development, the test kitchen will send up the recipes to be sampled and rated. Then they’ll make a few for pictures, and we got to eat those too! I’m not sure what issue it ran in, maybe March?, but the pizza was one of my favorite things that came from that kitchen.

    Also I like how you use your leftovers! As with the won ton wraps before and now the flatbread. I tend to let things go to waste far too often because I run out of original ways to use them.

    I can’t wait to try this! I had just decided to have a salad night once a week for dinner now that the weather is finally getting warmer. This would definitely count as a salad and this will be on next week’s menu! Thanks for a wonderful recipe!

        Just finished dinner and it was a huge hit! I can’t even tell you how much I loved it! Even better, ALL my kids ate it (folded theirs up like a sandwich with the salad inside). They are 7, 5 and 3 so that is huge! The only change was that 2 of them chose ranch dressing over the maple vinagrette and I didn’t put onions on theirs. I can’t wait to make this over the summer with lettuce and tomatoes from our garden! :)
