If you’re as big a fan of buffalo chicken as I am, you’re going to love these super-quick buffalo salmon lettuce wraps! They take all of 10 minutes to come together, and maybe even less time if you’re determined.

Buffalo Salmon Lettuce Wraps

Makes: Serves 2

Ingredients

Instructions

  1. Pull the film off the top of the rice cup. Microwave on HIGH for 1 minute.
  2. In a small bowl, combine the salmon and hot sauce and mix well. Add more hot sauce if desired.
  3. Fill each of the 4 iceberg lettuce leaves first with rice, then a spoonful of the spicy salmon mixture, some chopped celery, and a tablespoon of crumbled blue cheese. Serve.
