This is the summery mix I made last week for Mom. Since then, it has quickly become my new favorite salad. Sweet ripe peaches, grilled chicken, salty pistachios, creamy goat cheese, and a homemade honey vinaigrette. Enjoy!

Pistachio Peach Salad with Honey Vinaigrette

This has quickly become my new favorite salad. Sweet ripe peaches, grilled chicken, salty pistachios, creamy goat cheese, and a homemade honey vinaigrette. Enjoy!

Ingredients

For the honey vinaigrette:

  • ¼ cup apple cider vinegar
  • 2 tablespoons honey
  • ¼ cup extra-virgin olive oil
  • pinch each of salt and pepper

For the salad:

  • 5 ounces spring mix or any baby greens you like
  • 3 ounces goat cheese crumbled (3/4 cup)
  • 2 ounces shelled pistachios about ½ cup
  • 2 ripe peaches pitted and thinly sliced
  • 12 ounces grilled chicken thinly sliced (about 2 standard-sized breasts)

Instructions

  • In a small bowl, whisk together the vinegar and honey. Slowly add the olive oil, whisking constantly, followed by the salt and pepper, and continue whisking until well combined.
  • In a large bowl, toss the spring mix, goat cheese, and pistachios. Add the dressing and toss to coat. To serve, divide the salad among four plates or bowls. Distribute the peaches and chicken evenly among the salads. Serve immediately.

    Andie, first off I love the meal plan you have put your mom on…I am using it as well!!! (Love it) I have a question…if your mother was exercising would she be eating more calories? I get confused with this. The calorie calculator tells me to eat round 1400 – 1500 calories to lose weight, however I am exercising as well. Thank you!

    Hi! New reader :) I can’t stand Goat’s cheese, is there something else that would work well in this? Maybe feta?? Thanks :)

      Hey Emma! Yes, feta would be a perfect swap for the goat cheese, and the nutritional profile for both cheeses are almost identical so the nutrition information remains nearly the same.

    I made this delicious salad for dinner last night, and it was so good that I am going to have it again this evening. Great combination of flavours.
    I didn’t have any apple cider vinegar so I used White Balsamic Vinegar from Trader Joe’s, and it was amazing.
    My new favourite salad!

    What a great lunch idea. I’m a big fan of salads – and pistachios. This is both easy to make and looks delicious. Fresh peaches are almost ready in our area, so will be trying this in the next 2 weeks.
