S’Mores Brownies. Rich and intense chocolate fudge brownies. Gently salted and buttery graham cracker crumb crust. Billowy toasted marshmallows.
I mean
Come on
Because like
You know?
4th of July S’Mores Brownies
Ingredients:
Graham Cracker Crust
- 2 cups graham cracker crumbs (15 cracker sheets)
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
Fudge Brownie Filling: (recipe from Baker’s One Bowl Brownies)
- 4 ounces unsweetened chocolate, chopped
- 3/4 cup (1 1/2 sticks) unsalted butter
- 2 cups granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
Toasted Marshmallow Topping:
- 4 cups (packed) miniature marshmallows
Instructions:
- Preheat the oven to 350°. Line a 13×9” pan with foil. Coat with cooking spray. Make the graham cracker crust by combining the graham crumbs, sugar, and butter in a large bowl. Press the crumb mixture firmly into the bottom of the pan- creating an even 1/4″ thick crust.
- Place the chocolate and the butter in a large bowl. Microwave for 2 minutes on high heat, until the butter is melted. Stir until the chocolate is completely melted.
- Stir in the sugar. Mix well.
- Add the eggs and vanilla and beat until well combined, about 1 minute.
- Blend in the flour, mixing until just combined. Scrape down the sides of the bowl and give it one final stir.
- Pour the brownie batter over the crust in the pan and spread evenly to the sides.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with only a few fudgy crumbs.
- The top should be shiny. Let the brownies cool completely on a wire rack, about 1 hour.
- Turn on your oven’s broiler. Spread the marshmallows over the cooled brownies. Broil for 1-2 minutes, or until the marshmallows begin to brown. Watch them carefully because once they begin to brown, they can burn very quickly. Let the pan cool. Lift the foil overhang to remove the bars from the pan. Peel down the foil sides. Cut into squares using a sharp knife. For a clean edge, wipe the knife down after each slice with a damp towel.
Maybe it’s not neighbourly, but I’m making these for Canada Day.
Partially because I’m Canadian.
But mostly because it comes sooner :)
Oh my! These look delicious! S’mores brownies are one of my absolute favorite.
They’re the next best thing to real s’mores!
LOVE, can I come to your 4th of July?
Holy hell those look amazing. Need.
I love your blog! ^-^
I got an email about Smore Brownies a few weeks ago and made them.
They were SO GOOD!!
I used Bon Appetits browned butter brownies for my brownie layer.
Might have to make them again.
So perfect for Fourth of July! Yum!
This is one of my favorite ways to eat a brownie. :)
Okay – this *need* to be made here on the farm! My boys are going to love them!

I’m having a dilemma…classic hersheys for my weekend s’mores…or something overpriced but oh so delicious…like Green & Blacks or Theo…what to do;)
I would do anything to have one of those brownies right now. Anything. S’mores make my world go ’round. Really, they do. It’s a sickness.

For the past three DAYS I’ve been driving by my grocery store, and I know they have all of the paraphernalia available for s’mores, and i keep on driivng because it’s been kind of crappy otu lately and it hasn’t been good weather for s’mores…and now you do this? Crap. Now I HAVE to go out and get the ingredients for this. I hope you’re pleased with yourself. <3
Can me and my boyfriend come to visit just to split a pie that looks like that? Seriously beautiful photography…your blog is the first one I read all day! And I always appreciate your comments back!

Oh my goodness these look amazing! Since I am 32 weeks pregnant with twins I can make and eat these and not feel guilty right? The babies need brownies to give them energy to grow!
Yum! I agree this is the best!
I’m kind of embarrassed to admit I haven’t stopped thinking about these since I read this post via my Droid Google Reader at school this morning.
I’m thinking if they can make it out of my house uneaten, I may make them for a BBQ this weekend!
And.. are you sure we’re not food soul sisters? Your posts always make me drool!!!! :)))
I was already planning on making these for 4th of July (but using boxed brownies cuz I’m also making 6lbs of potato salad). When I logged on to your blog today my heart skipped a beat with joy :)
I think Australia should start celebrating the 4th of July just so I can make and eat these bad boys. Come to think of it, who needs a national holiday to justify S’more Brownies…

How did I not realize that you had a Recipes page, in which I can find all of my favorite ‘Can You Stay for Dinner’ recipes so much faster and easier? I guess this proves just how much (or little) I observe things. Anyway, this is like the best find ever… And I cannot wait to make every one of these recipes! :) Seriously. What can I say, your recipes never fail me!
Um. Wow. I’m speechless.
These look amazing……just WOW!
It’s official. I now know what I’m taking to the party on Monday night. These look killer. In such a good way.
I have been wanting to make s’mores bars forever, but I could never figure out how to not burn the ‘mallows. So I now need to make these immediately. Thanks!

I made these for a 4th of July party I went to and they were a big hit! Thanks for sharing the recipe!!!
Thanks for posting! Stumbled across your blog through another and made these for the 4th…they won rave reviews! And now I have a new blog to follow!
this looks absolutely ridiculous. My mouth is currently watering from your pictures.. I am in heaven. But would be even more in heaven if I had that right now!
The minute I saw your photo of these brownies I knew this was the dessert I was going to bring to a July 4th BBQ. I have a crummy broiler, though, the the marshmallow tops browned quickly without melting the bottoms. I realized this when I removed the brownies from the pan to cut them – the half-melted marshmallow topping was a single, removable layer! I was getting ready to the store to buy some Fluff to use as glue, when my niece suggested I use the jarred hot fudge sauce we’d had on ice cream. I spread a thin layer on the brownies using a pastry brush, pressed down the mallow layer, and voila! The BBQ guests RAVED about these brownies!
Made these and they were a huge hit!!! Everyone loved them, me included.
Tried these yesterday, oh my they were soooo yummy!! Thanks for the great recipe!!
Can also use blow torch!

I made these this weekend for a family bbq. I’m a novice baker but these were fun and easy and were a huge hit!
I was nervous when I had to do the broiling but that worked out well. Cutting was also stressing me out but had the idea to spray the knife with the cooking spray and it cut with ease!
I love this blog and found your other personal posts inspiring and funny.
I have to agree that they are absolutely delicious. I did not put sugar in the crust mixture and they were still sweet enough. My only problem was cutting them, with the marshmallows detaching. I tried the cooking spray, ehh, not so effective. How did you resolve this issue?
Hey Diana!
Hmm…i don’t know what I did differently than stated above to keep them intact, but maybe spraying the knife with cooking spray as well? Sorry I’m not of better help. Next time I make them, I’ll be sure to take notes on how to effectively cut them.
I really appreciate you trying the recipe!
Andie
Thanks for the quick reply. Your marshmallow base looks more melted then mine, so next time I may let them heat up a little first and then broil them. I was also thinking about putting a layer of chocolate sandwiched between brownies and marshmallows for better adhesion.
Knife with Pam wasn’t really effective. Tks again:)
Can I use brownie mix in place of the brownie recipe provided?
Just made this. I had some extra graham cracker crumb crust mixture from a cheesecake I made and I stumbled across this recipe. I used a box brownie mix bc it’s easy and it turned out fantastic. Very pregnant and this hits the spot for sure.
