To make it yours: pop a slice of your favorite whole grain bread in the toaster and get to work frying an egg over easy (a runny yolk is especially good on avocado toast). Slice or mash ¼ of an avocado and spread it on your toast. Lay the egg on top, add 2 slices of tomato, and season with a good pinch of salt and pepper. That’s it!

To me, the best bagel is well-toasted with a generous schmear of cream cheese and thin slices of smoked salmon or lox. This avocado toast mimics that winning combo—with mashed avocado, whipped cream cheese, thinly sliced smoked salmon, and a sprinkling of toasted sesame seeds for a little crunch.
