Orange Ginger Marinated Grilled Chicken

This chicken is bright and citrusy with the spiciness of fresh ginger. The soy sauce I use in the marinade and sauce isn’t pronounced, but it helps marry the citrus, ginger, and garlic, and adds a lovely hint of umami flavor.

How To Make Orange Ginger Marinated Grilled Chicken Step By Step

  • In a large bowl, whisk orange zest and juice, lime zest and juice, soy sauce, honey, ginger, garlic, cilantro, salt, cayenne, and pepper. Add the olive oil, whisking constantly until combined.
  • Transfer ¼ cup of the orange-ginger mixture to a separate small bowl; cover and refrigerate. Add the chicken to the bowl with the remaining orange marinade and toss them in the sauce. Marinate for at least 1 hour and up to 24 hours.
  • Preheat your gas grill with all burners on high and close the lid. When the grill is hot (after about 15 minutes), turn the 2 burners closest to the front to low, keeping the back burner on high. Remove the chicken from the bag and arrange on the grates over the low heat burners.
  • Cover and cook until the underside of the chicken is just beginning to develop light grill marks, 6 to 9 minutes. Flip the chicken, cover, and continue to cook until the chicken is firm to touch, 6 to 9 minutes longer. To get a nice char on the chicken, now move the chicken to the part of the grill over high flames and cook uncovered until each side has solid grill marks, 5 to 6 minutes, flipping halfway.
  • The chicken should be completely firm to the touch and register 160 degrees F on an instant-read thermometer. Transfer the chicken to a plate, tent with foil, and let it rest for 5 minutes before serving.
  • Stir the refrigerated orange-ginger sauce and drizzle or brush it on the chicken before serving.

Grilling season is upon us, and who doesn’t love a perfectly charred bit of meat or veg! Below are a few tips for a top notch grilling experience!

  • Like any other kitchen appliance, a grill needs to be maintained, cleaned, and prepped to work properly and efficiently. If you want great grilled chicken, make sure you have enough fuel, and rub a little oil onto the (clean and preheated) grates right before cooking so the chicken doesn’t stick.
  • Make sure you pick the same sized chicken pieces, so they cook at the same time.
  • The uneven shape of boneless, skinless chicken breasts makes them tricky to grill, but by just spending a few minutes pounding the thicker end thinner, you’ll both reduce cooking time and end up with more evenly cooked meat.
  • After cooking the chicken on a medium heat, to get a nice char on the chicken, move the chicken to the part of the grill over high flames and cook uncovered until each side has solid grill marks, 5 to 6 minutes, flipping halfway.

Not only does this marinade pack a satisfyingly zesty punch , but it adds a rich orange coating that looks incredible! The marinade is a mix of orange juice and zest, lime juice and zest, soy sauce, honey, fresh grated ginger, garlic, cilantro, and a pinch of cayenne pepper.

Top Tips For Orange Ginger Marinated Grilled Chicken

  • Marinade the chicken for at least for 1 hours, up to 24 hours if possible.
  • A gallon-sized, zip-top freezer bag is great for marinades, namely because it makes cleanup easier but also because it helps the marinade sit snugly around the chicken. If you don’t want to dirty another bowl — just make the marinade right in the bag.
  • Dry the chicken before you cook it. Before grilling, remove the chicken from the marinade and pat dry. This will prevent the marinade from burning or causing flare-ups on the grill.
  • Brush the cooked chicken with a final coating of the marinade sauce.

    This was amazing! Best chicken I have ever made. For those who would rather cook this in the oven (because it’s 20 degrees outside!) I baked mine on a rack on a foil-lined cookie sheet in a pre-heated 350F degree oven for 30 minutes. I sliced the breast & drizzled the refrigerated marinade on top – so good! It was perfect served with quinoa and steamed green beans. Thank you.
