4th of July S’Mores Brownies

Ingredients:

Graham Cracker Crust

  • 2 cups graham cracker crumbs (15 cracker sheets)
  • 1/4  cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted

Fudge Brownie Filling: (recipe from Baker’s One Bowl Brownies)

  • 4 ounces unsweetened chocolate, chopped
  • 3/4 cup (1 1/2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour

Toasted Marshmallow Topping:

  • 4 cups (packed) miniature marshmallows

Instructions:

  1. Preheat the oven to 350°. Line a 13×9” pan with foil. Coat with cooking spray. Make the graham cracker crust by combining the graham crumbs, sugar, and butter in a large bowl. Press the crumb mixture firmly into the bottom of the pan- creating an even 1/4″ thick crust.
  2. Place the chocolate and the butter in a large bowl. Microwave for 2 minutes on high heat, until the butter is melted. Stir until the chocolate is completely melted.
  3. Stir in the sugar. Mix well.
  4. Add the eggs and vanilla and beat until well combined, about 1 minute.
  5. Blend in the flour, mixing until just combined. Scrape down the sides of the bowl and give it one final stir.
  6. Pour the brownie batter over the crust in the pan and spread evenly to the sides.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with only a few fudgy crumbs.
  8. The top should be shiny. Let the brownies cool completely on a wire rack, about 1 hour.
  9. Turn on your oven’s broiler. Spread the marshmallows over the cooled brownies. Broil for 1-2 minutes, or until the marshmallows begin to brown. Watch them carefully because once they begin to brown, they can burn very quickly. Let the pan cool. Lift the foil overhang to remove the bars from the pan. Peel down the foil sides. Cut into squares using a sharp knife. For a clean edge, wipe the knife down after each slice with a damp towel.

    STOP IT, Andrea! For the past three DAYS I’ve been driving by my grocery store, and I know they have all of the paraphernalia available for s’mores, and i keep on driivng because it’s been kind of crappy otu lately and it hasn’t been good weather for s’mores…and now you do this? Crap. Now I HAVE to go out and get the ingredients for this. I hope you’re pleased with yourself. <3

    How did I not realize that you had a Recipes page, in which I can find all of my favorite ‘Can You Stay for Dinner’ recipes so much faster and easier? I guess this proves just how much (or little) I observe things. Anyway, this is like the best find ever… And I cannot wait to make every one of these recipes! :) Seriously.     The minute I saw your photo of these brownies I knew this was the dessert I was going to bring to a July 4th BBQ. I have a crummy broiler, though, the the marshmallow tops browned quickly without melting the bottoms. I realized this when I removed the brownies from the pan to cut them – the half-melted marshmallow topping was a single, removable layer! I was getting ready to the store to buy some Fluff to use as glue, when my niece suggested I use the jarred hot fudge sauce we’d had on ice cream. I spread a thin layer on the brownies using a pastry brush, pressed down the mallow layer, and voila! The BBQ guests RAVED about these brownies!

    I made these this weekend for a family bbq. I’m a novice baker but these were fun and easy and were a huge hit!

    I was nervous when I had to do the broiling but that worked out well. Cutting was also stressing me out but had the idea to spray the knife with the cooking spray and it cut with ease!

    I love this blog and found your other personal posts inspiring and funny.

    I have to agree that they are absolutely delicious. I did not put sugar in the crust mixture and they were still sweet enough. My only problem was cutting them, with the marshmallows detaching. I tried the cooking spray, ehh, not so effective. How did you resolve this issue?

      Hey Diana!

      Hmm…i don’t know what I did differently than stated above to keep them intact, but maybe spraying the knife with cooking spray as well? Sorry I’m not of better help. Next time I make them, I’ll be sure to take notes on how to effectively cut them.

        Thanks for the quick reply. Your marshmallow base looks more melted then mine, so next time I may let them heat up a little first and then broil them. I was also thinking about putting a layer of chocolate sandwiched between brownies and marshmallows for better adhesion.
        Knife with Pam wasn’t really effective. Tks again:)

    Just made this. I had some extra graham cracker crumb crust mixture from a cheesecake I made and I stumbled across this recipe. I used a box brownie mix bc it’s easy and it turned out fantastic. Very pregnant and this hits the spot for sure.
