Chicken Bacon Cheddar and Medjool Date Salad

The slight spiciness of the watercress, blended with baby spinach to tone it down just a bit, is so fresh. It works well with the sharpness of the cheddar, the saltiness of the bacon, and it's balanced by the naturally sweet bites of Medjool date.

Ingredients

Honey Dijon Vinaigrette

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 ½ teaspoons Dijon mustard
  • 2 teaspoons honey
  • ¼ teaspoon salt
  • Pinch teaspoon freshly ground black pepper

Chicken Bacon Cheddar Date Salad

  • 12 ounces roasted chicken breast skin removed and shredded (roughly the weight of both breasts on a standard size rotisserie chicken)
  • ½ pound applewood smoked bacon pan-fried and crumbled (8 slices)
  • 4 ounces sharp cheddar cheese shredded (½ cup)
  • 6 Natural Delights Medjool Dates pitted and finely chopped
  • 3 cups packed watercress
  • 3 cups packed baby spinach

Instructions

  • In a large bowl, whisk the olive oil, vinegar, Dijon, honey, salt, and pepper.
  • Add the chicken, bacon, cheddar, Medjool dates, and toss. Add the watercress and spinach and toss gently to combine.
  • Divide the salad among 4 serving plates and serve immediately.
