Quick Pickles:
- 1/3 medium cucumber thinly sliced
- 1 tablespoon rice wine vinegar or red wine vinegar
- Pinch salt
- 1/2 teaspoon toasted sesame seeds
Asian Turkey Burgers:
- 8 ounces ground turkey breast
- 1 teaspoon sesame oil
- 1 garlic clove minced
- 1/3 cup chopped scallions
- 2 teaspoons low-sodium soy sauce
- 2 tablespoons creamy natural peanut butter
- 6 leaves green leaf lettuce
- 1 lime
Preheat the oven to 375 degrees F. Line a baking sheet with aluminum foil.
In a small bowl, toss the cucumber with the vinegar and salt. Set aside.
In a medium skillet, heat the sesame oil over medium-high heat. Add the scallion and garlic and cook, stirring constantly, until fragrant, about 30 seconds. Transfer to a large mixing bowl.
To the bowl with the scallions and garlic, add the soy sauce and peanut butter and mix well. Add the ground turkey and use your hands to mix until just incorporated. Form into 2 even patties.
In the same skillet that you cooked the scallions, heat the olive oil over medium-high heat. Add the turkey patties and cook until just browned, 2 minutes per side. Transfer to the prepared baking sheet and bake until cooked through, about 8 minutes.
Serve the burgers over the green leaf lettuce leaves and top with the pickles and a sprinkle of sesame seeds. Squeeze fresh lime juice over the burgers, if desired.
