Meet the BLTizza
Bacon, lettuce, tomato, and izza.
She’s awfully purdy.
On Sunday when I asked Daniel what I should make for lunch, he kissed me sweetly, told me to choose, but reminded me that he “doesn’t love BLTs" like I do. I smiled and told him, “oh, thank you for reminding me!”
And made a BLT pizza instead.
I hear compromise is the foundation of a loving relationship. I absolutely intend to try that someday.
Until then…
Applewood smoked bacon and crumbled feta cheese with greens, tomato, and red onion, all tossed in a sweet and salty maple-bacon vinaigrette. The play of flavors is just so lovable. Tangy tags salty and sweet catches smoky. Feel free to use pizza dough here, but I highly recommend using fresh flatbreads from the deli or bakery section of your local market. Just char them slightly under your broiler and pile them high with bacon salad.
BLTizza
makes 2
4 cups mixed baby greens
1 small tomato, diced
1/2 small red onion, thinly sliced
4 slices bacon, pan fried, drippings reserved for dressing
1/2 cup crumbled feta cheese
1/4 cup maple bacon vinaigrette (recipe below)
2, 8” flatbreads
Gently toss the greens, tomato, onion, crumbled bacon, and feta cheese with the vinaigrette in a large bowl. Set aside. Broil the flatbreads for about 2 minutes per side, just until charred and crispy. Divide the salad mixture among the two warm flatbreads, slice with a long chef’s knife, and serve immediately.
Maple Bacon Vinaigrette
3 tablespoons extra-virgin olive oil
¼ cup apple cider vinegar
2 tablespoons bacon drippings
1 ½ tablespoons maple syrup
1 tablespoon spicy brown mustard
1/2 teaspoon salt
1 teaspoon freshly ground pepper
Whisk all dressing ingredients in a medium bowl until well combined. Store in an airtight container at room temperature for 2 days. You will only use 1/4 cup of dressing for the BLTizza.

I’m not a huge fan of bacon but this looks delicious!!! a little bacon is pretty good. It’s so purdy too–you’re right! ;)
I LOVE pizza! I LOVE bacon! And I LOVE BLT’s!
Obviously I should start making this right about now!
This looks good to eat :)
Wow.. that looks awesome! Aren’t dishes always so much better when they are pretty too!?
I’ve only been reading your blog for, like, a week, but I already love it so much. All the beautifully photographed and colourful vegetables and your funny writing… Awesome!
She IS awfully pretty :)
This looks delicious but that vinaigrette is genius!
haha love the name!
I’ve actually made something similar to this. SO GOOD.
I love everything about it! I’m drooling all over my keyboard! :)
ahhhhhh this looks delicious. though maybe i’d skip the onions.
you had me at maple bacon. i’ve been diligently filtering and saving my bacon drippings to use for something really tasty. i think this might be it.
on another note, a quick look at my google reader and i’m fairly certain you win for the most starred entries.
Thank you Haya!! Let’s meet for pizza again in Chicago someday :)
Okay I am totally going to make that with eggplant bacon. Looks delicious!
There is no such thing as compromise – just remember that. :)
Mmmm That looks so clean and fresh! I think you need to throw a few avocado slices on there, too!
Ummm did someone say “maple bacon vinaigrette”??? Mouth.Watering. This looks amazing!
Oooh, such a great idea!! I love BLTs!! And compromise is overrated. lol
Wow, what a creative (and delicious) recipe!! I’d go for the fresh flatbreads as well instead of the crust. Great idea Andrea!
get. in. my. belly.
I’m pretty sure I star every single one of your posts in my reader as recipes to try. :)
Who doesn’t LOVE BLT’s? That’s just criminal!
This dish is perfect!! I love that you used flat bread, the extra crunch had to be divine! Maybe add a little avocado for the ride? I’m not sure if that would play well with the feta. Have a great weekend- Paulie
She’s simply stunning.
Beautiful!
Is it okay as a vegetarian to say that I miss bacon?
this is such a great idea. I especially love the maple dressing. my mother in law makes one that is AMAZING. And anything with bacon drippings is a-okay in our household :)
You take such gorgeous photos on top of make delicious looking recipes. Daniel is a lucky guy!
Ummm THIS LOOKS SO GOOD! I love bacon in just about everything – a usual suspect in my salads these days. Daniel is a lucky man!
Ok this is a recipe I am making tomorrow.. I just showed my daughter and she gave it a big thumbs UP… I have to tell you since reading your blog,, I find myself excited each morning looking for another recipe. And I have tried many, many of them. Plus I have to share that each morning I am now looking forward to oatmeal, peanut butter, with a big old banana on top…. Way to go. I have the fluff in the house too.. I eat that by the spoonfuls, which is not to healthy, but does wonders for my sweet tooth… thanks again Andrea…. I really do love your site. :)
Kathy, your note made me smile, smile, smile. Thank you so very much :)
Is there anything better than feta and tomato?
I’m going to go with no. Love the creativity!
This is awesome!!
YUM. Daniel and my husband can go have lunch together next time… I’d totally come eat this with you! Looks positively delicious. :)
This reminds that I have not had a BLT nor a pizza in a long time – and that I should make this recipe soon!
anything with bacon is an automatic win! looks delicious!
Uh, YUM!
I think I’ll try this one on my newly-vegetarian daughter, subbing garbanzos for the bacon. Looks tasty, as always!
feta + tomato + IZZA!?!? The perfect threesome.
A work of art, for sure! I’m bookmarking this for when tomatoes are at their peak…if I can last that long, anyway.
I just started following so this comment is in response to something you said like 10 posts ago about hating cold sheets – The Vermont Company Store has this fantastic bed warmer that you put under your sheets and warms your bed up. Plus it has dual controls so your side can be a different temp from the other side.
Worth a million but probably much cheaper!
delicious combination of flavors. this would be great as just a salad too:) i can’t wait to try that maple vinaigrette.
I LOVE the name of this – and it looks awesome. I’m completely going to try this – thanks for posting another great recipe!
Ahhhh this looks so so good. and also really easy to make!!
Acccttuallly, I was wondering. I’m heading off to university next year and I will be in a shared flat, so I will have access to a kitchen. I REALLY do not want to be spending money on food and eating out often… I know that if my meals start to get boring I will end up just buying already made food. Could you possibly do a post on meal planning while at college? I find that a lot of recipes are for at least two or four servings… and since I will have a shared kitchen I dont know how much room I will have for freezing extras. But I really want to have healthy, satisfying yummy meals.
anyway I’m not going until september… so if you do decide to do some sort of post dont worry about doing it anytime soon!!
thanks!!
Claire
This is absolutely beautiful and looks delish!
yum, maple bacon vinaigrette!? must make now!
What a fantastic idea! And it’s such a pretty pizza!
You had me at maple bacon vinaigrette. I’m dying over how good this looks!
When I was working at FamilyFun they were developing a BLT Pizza recipe. During recipe development, the test kitchen will send up the recipes to be sampled and rated. Then they’ll make a few for pictures, and we got to eat those too! I’m not sure what issue it ran in, maybe March?, but the pizza was one of my favorite things that came from that kitchen.
Also I like how you use your leftovers! As with the won ton wraps before and now the flatbread. I tend to let things go to waste far too often because I run out of original ways to use them.
I’m loving the flatbreads :) And yes, we can kindly call obsession “a good use of leftovers.” I like how you think :)

I will eat anything with feta cheese on it :)
I can’t wait to try this! I had just decided to have a salad night once a week for dinner now that the weather is finally getting warmer. This would definitely count as a salad and this will be on next week’s menu! Thanks for a wonderful recipe!
Thanks Michelle! Enjoy!!
Just finished dinner and it was a huge hit! I can’t even tell you how much I loved it! Even better, ALL my kids ate it (folded theirs up like a sandwich with the salad inside). They are 7, 5 and 3 so that is huge! The only change was that 2 of them chose ranch dressing over the maple vinagrette and I didn’t put onions on theirs. I can’t wait to make this over the summer with lettuce and tomatoes from our garden! :)
YES! So glad to hear it, Michelle!
